Put the onions on the bottom the slowcooker. Nestle the chicken on top. Top with peppers, garlic fajita seasoning, chopped tomatoes, and salt and pepper.
2 Slow cook on low for 5 or 6 hours or high for 3 or 4.
3 Add rice and chicken stock an hour before timer ends then cook on high for the rest of the time.
4 Add cheese on top, enough to cover chicken exact amount to your preference and cover for a couple minutes until the cheese melts then immediately before serving crush some doritos and sprinkle over the chicken again exact amount to your preference.
