Turkey Taco “pasta”
Ingredients
Potential toppings
Instructions
-
Preheat oven to 400 degrees
-
Cut the spaghetti squash in half lengthwise and scoop out the seeds then cook for 30 to 40 minutes until the flesh pulls like spaghetti to a fork.
-
Meanwhile Grease skillet and cook turkey until it’s cooked through, adding preferred amount of taco seasoning while it cooks.
-
Add onions and garlic and cook until onions soften then add diced tomatoes and tomato paste and simmer for 5 minutes.
-
Stir in the Greek yogurt and sour cream and add salt and pepper to taste.
-
Take a fork and pull at the spaghetti squash until the flesh forms into spaghetti like noodles. You can either make it a squash boat and put the cooked meat directly on top or put the squash noodles on a plate and top with the meat mixture. Either way after the meat is put on top with whatever toppings you want.
Note
The original recipe was for a taco pasta so instead of
spaghetti squash just use whatever regular or high protein pasta you want to
use and cook it according to its directions instead of the spaghetti squash.
