Crumbl Inspired Cookies and Cream Cookie

Instructions

  1. Preheat oven to 350 degrees.
  2. Mix the pumpkin puree, half the Greek yogurt, coconut flour, cocoa powder, protein powder, sweetener, egg, baking powder, vanilla, and almond milk together in a large bowl until it forms into a batter.
  3. Separate the batter into 4 balls of dough and put on a parchment paper lined baking tray. Bake for about 11 minutes until the edges are set.
  4. While the cookies are baking combine the remaining Greek yogurt and the cheesecake mix together in a bowl.
  5. Take the cookies out and let cool for  few minutes then spread the cheesecake mix on top.
  6. Crumble two of the oreo thins and sprinkle them over the cookies. Put a dollop of cool whip on top of all that. Then split the remaining 2 oreos apart and place one on top of the cool whip layer of each cookie.
  7. Let rest for at least half an hour in the fridge.

I made some for my mom’s birthday. The recipe failed to
mention that half the Greek yogurt was supposed to go into the batter mix so
they ended up being a little drier than they should have been. They were still
pretty good and the next day everything got a chance to meld together and was
more moist.
