Balsamic Chicken with Strawberry Feta Basil topping

Mix the Balsamic vinegar, olive oil, Dijon, garlic and seasonings in a large bowl and add the chicken to marinate for a couple hours or overnight.

Oil and heat a pan and cook the chicken on it for about 5-6 minutes per side or cook in the oven for around 20 minutes until it is cooked all the way through.

Make the topping by dicing the strawberries and slicing the basil then mixing them with the feta crumbles and seasoning with salt and pepper and mixing.

When serving top with the strawberry feta topping then drizzle some of the Balsamic glaze over it all.

(Optional for a homemade balsamic glaze) combine ½ a cup of balsamic vinegar with 2 tbs of maple syrup or honey and bring to a boil over the stovetop. Once bowl turn down to medium low and lit simmer for about 10 minutes stirring occasionally until it thickens up. Let cool to allow it to thicken more. It will need to be refrigerated once it’s cooked.
Note
Can be cooked a variety of different ways. I cooked it in the oven the first time then grilled it the second time. If grilling make sure you don't burn the marinade.
