Buffalo ranch chicken stuffed potatoes

Ingredients

Shredded Buffalo Ranch chicken- (from earlier recipe)

Instructions

  1. Cook BR chicken according to the recipe found elsewhere in here
  2. Wash potatoes and stab several times with a fork. Brush a thin layer over the skin of the potatoes.
  3. Cook in airfryer at 350 degrees for 10 minutes flip and cook another 10 minutes.
  4. Take out of air fryer. Let cool enough to be handleable then cut in half. Hollow out the insides of the potatoes and put inside a bowl. Mash the potatoes with a fork. Add the chicken, cheese, sour cream, and green onions and mix together.
  5. Add the mixture back into the potato skins and top with a little more shredded cheese.
  6. Cook in the air fryer at 350 for another 6 minutes.

Note

This recipe I used some of the buffalo ranch chicken I made in the crockpot. Can also be made in the oven. One issue with using the air fryer is the cheese tends to be more crispy than melted.
