turkey meatball cottage cheese wrap sub
Ingredients
Turkey meatballs:
Cottage cheese wraps
Tomato sauce
Instructions
Meatballs :
-
Place all meatball ingredients in a large bowl and mix until thoroughly combined.
-
Roll into approximately one inch balls and place in air fryer basket
-
Air fry on 375 for 8 minutes rotate meatballs and fry again for another seven minutes or until fully cooked
Wrap:
-
Preheat oven to 350 degrees for the wraps
-
Mix all ingredients in a bowl.
-
Cover a baking sheet with parchment paper and spray with oil or nonstick spray.
-
Pour batter onto the tray. Smooth into a large rectangle in a perfectly level and even layer (this takes a bit of trial and error to get right. Needs to be as perfectly smooth as possible or it won’t cook evenly and parts will burn while other parts are undercooked)
-
Cook in the oven starting at about twenty minutes. Watch carefully as it needs to be at a perfect cooking time. It needs to be firm enough to hold up but not cooked enough that it starts to brown and get crunchy. It should be firm enough to hold together and be rolled when it is done.
Tomato sauce:
-
Heat tomato paste and broth in a saucepan on the stove. Stir in lemon juice cottage cheese and seasonings and cook over low heat for a few minutes.
-
Add meatballs to the sauce and stir until the meatballs are all covered in the sauce.
-
Cut cottage cheese in half and place meatballs on them. Top cheese or onion or whatever you desire fold up and enjoy.
